Afternoon tea time. A freshly baked peach galette makes it feel a little better.

This peach galette started with a basket of summer peaches on the counter.

I sliced them, mixed them with a little sugar and spice, and folded them into a simple homemade crust.


It baked into a golden galette with soft peaches in the middle and crisp edges around the outside.

I like the time spent baking, so I bake. I like bread made at home, so I bake. Sometimes going out to buy it feels like more work, so I bake.
That’s enough reason.

Today, as I take out the ingredients for madeleines,
everyone starts naming one flavor they want.

Someone even asks for the chocolate coating to be only halfway dipped.
